Cheddar Chicken Spaghetti

It's been very busy around these parts and the next few weeks are going to be even busier. Last week I needed a quick meal because I needed to head out of town one evening, but I wanted to get dinner in our bellies first. I didn't have time for any trips to the store so I had to make due with what I had, which wasn't much. I began looking through one of my cookbooks for a recipe that had few ingredients that were already in the cupboard. I found this recipe for Cheddar chicken spaghetti. I maybe would have never made it had it not been simple. I actually liked it. Seems to be a very kid friendly dish as well. So, I will definitely cook this recipe again.

Cheddar Chicken Spaghetti

1 pkg (7 oz) spaghetti, broken
2 cups cubed chicken (I actually used 2 cans of chicken from costco)
2 cups shredded cheddar cheese, divided
1 can condensed cream of chicken soup, undiluted
1 cup milk
1/4 teaspoon salt
1/4 teaspoon pepper

Cook spaghetti according to package directions. Meanwhile, in a bowl, combine the chicken, 1 cup cheese, soup, milk, salt and pepper. Drain spaghetti; add to the chicken mixture and toss to coat. Transfer to a greased 9x13 dish. Sprinkle with remaining cheese. Bake, uncovered, at 350 for 20-25 minutes or until heated through.

(I think next time I might add some frozen veggies to the mix)
