Kicking off Chinese week with Sweet and Sour chicken

I made this Chinese dish the other night and oh my, it was so good. The chicken was so tender and the flavor was just right. It takes a little bit of time and effort, but we all thought it was worth it! It wasn't overwhelming labor, just cooks in the oven for an hour and I wasn't aware of that, so we didn't eat until about 8 pm that night hehe. I am actually not a big fan of Chinese restaurants but I would definitely eat this any day. I made the extra pan of sauce which I felt was kind of needed, but we like sauce on our rice too. I'm not sure what restaurants do when they fry their chicken but this didn't feel as heavy with grease, since you use a tiny bit. I plan on sharing my recipe for Broccoli Beef soon, I'm not sure it will make it on the blog this week since I am heading out of town for the week but I will do my best. :) Enjoy!

Sweet and Sour Chicken (recipe from mykitchencafe.blogspot.com)
3-4 boneless, skinless chicken breasts
Salt and pepper
1 cup cornstarch
2 eggs, beaten
1/4 cup canola oil

Cut boneless chicken breasts into chunks. Season with salt and pepper. Dip chicken in cornstarch and then in egg. Fry in a little oil until brown but not cooked through. Place in a single layer in a baking dish. Mix sauce ingredients (below) together and pour over chicken.

Sauce:
¾ cup sugar
4 tablespoons ketchup
½ cup vinegar
1 tablespoon soy sauce
1 teaspoon garlic salt

Bake for one hour at 325 degrees. Turn chicken every 15 minutes. If you like extra sauce, make another batch of sauce and bring it to a boil on the stovetop. Stir constantly and let cook over medium heat until thickened and reduced - about 6-8 minutes.

Hey Heather, I made the sweet and sour chicken the other night and it was a big hit. The real test is Logan and he ate his whole plate and asked for more. He now refers to it as "the red chicken" and wants me to make it again soon. Thanks for the great recipes...can't wait to make more. Tiff
